I have the best story to share with you about the first time I had the Swedish pancakes at Stockholm Inn. It was two weeks ago and it was the Saturday before I started a new meal plan; I figured this would be a great opportunity to enjoy some of the foods that I knew I wouldn't be able to eat for the next six weeks and this was obviously the best place to do it.

I had the breakfast buffet and if you've ever had it, you know that the Swedish pancakes are part of the lineup. I was so excited for this. Even though I'm of Scandanavian decent, I've never had one; so I loaded my plate up and as I got to the end of the buffet line I was ready to load those bad boys up with whipped cream and fruit.

As I approached the toppings, I grabbed the spoon for the "whipped cream" and I stood there for minutes, violently shaking the spoon to get it off and onto the breakfast I couldn't wait to eat.  When I finally returned to the table and took my first bite, I let out this moan of satisfaction and commented on how I thought the "whipped cream" was really good but kind of buttery. My boyfriend looked at me, placed his hand on my knee and said, "that's whipped butter, sweetie; not whipped cream." Everyone at the table got a pretty good laugh and only slightly embarrassed, I ate them anyway. They are just that good.

Whether they topped it with whipped cream or butter, I'm sure these people who shared their love for Stockholm Inn's Swedish pancakes will agree that they just make life better.
