You can't go wrong with chocolate and mint, especially when you take the boxed brownie shortcut.

I mentioned earlier in the 25 days of desserts that I'm a boxed brownie kind of girl. Cookie and cake mixes rarely find themselves in my kitchen... except when Elizabeth needs a Funfetti cake... but boxed brownies are always on hand.

Betty Crocker just gets it.

Boxed brownies are also perfect to play around with, because the science is already done. This time I swapped the water for green creme de menthe. Yes it has alcohol in it, but also yes, the alcohol bakes out so you can serve these to kids and they will be fine.

I mixed Betty's box with 1/4 cup creme de menthe, 2 eggs and 2/3 cups oil. I ended up putting a splash of water in the mix, too, because it looked like it needed some, and I added half a bag of Nestle's mint and chocolate chips. I literally made this recipe up yesterday but my goodness it's delicious. Good job, me.
