Berrilicious cookies are perfect for Valentine's weekend, or a birthday party, or maybe a rough Wednesday afternoon. I invented these over the holidays and they're pretty irresistible.

Berrilicious cookies begin with something I found at Valli, Berrilicious mix w/ dark chocolate. It's a blend of dark chocolate squares, dried cranberries and dried strawberries.

A little expensive, maybe, but it's definitely worth trying for yourself. Enough backstory, here's the recipe:

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup uncooked rolled oats
  • 1 box of berrilicious mix with dark chocolate or you can make your own mix with about 2 1/2 cups of mix-ins.

Heat oven to 350 if you're making drop cookies, 375 if you're making bar cookies.

Beat butter and sugars in a large bowl until creamed. Add egg and vanilla, blend until mixed well. Add flour, baking soda, salt and oats. Stir in your berrilicious-ness.

Drop cookies: drop by rounded teaspoons on a parchment lined cookie sheet, bake 10-12 minutes.

Bar cookies: pour dough into a parchment lined pan, this recipe works well with 9x9 square pan or a long, skinny one. Bake for about 22 minutes, be sure to check periodically.
