It’s that glorious time of year again, when stretchy pants become part of your fair-going wardrobe and your taste buds go on an 11-day joyride. The Wisconsin State Fair (July 31–August 10) is back, and so is my desire to eat my way through it.
Sure, there are rides and concerts and livestock shows, but let’s be honest, we’re here for the food. Deep-fried, cheese-filled, stick-mounted or bourbon-glazed, here are the six new Wisconsin State Fair foods I cannot wait to sink my face into.

Two Wisconsin favorites: the Old Fashioned and chicken wings. Baked chicken wings glazed in a bourbon Old Fashioned-inspired sauce with bourbon, orange juice, cherry juice, and a hint of zest. Garnished with a skewer of an orange slice and a maraschino cherry on top.

The Blueberry Breakfast Bratwurst is wrapped in a fluffy pancake. A Usinger’s Blueberry-infused brat is rolled inside that flapjack with sweet and smoky house-made bourbon bacon jam.

This unique German-Asian dish features crisp wonton wrappers filled with bratwurst, cream cheese, green onion, and melted cheese, deep-fried, and drizzled with house-made sweet and sour sauce. Topped with Nori Komi Furikake seasoning.
