Hidden Girl Scout Cookie Cupcake Recipe
Girl Scout cookies are pretty great on their own, but it's extra fun to sneak them into other desserts.
With two Girl Scout nieces, and some little Girl Scout friends, my family pretty much has Thin Mints and Tagalongs coming out of our ears.
Instead of freezing them or giving them away. I thought why don't I use them in a dessert for my mom's birthday?
I was planning on making a bunch of different cupcakes with Girl Scout cookies in them, but wasn't prepared with enough cupcake pans, so I settled for Tagalong Girl Scout cupcakes and a Thin Mint trifle.
To make the cupcakes, all you need is a chocolate cupcake recipe and a box of Tagalongs. I used a cake mix, but added a bunch of ingredients to make it a thicker cake. I'm not really into regular cake mixes, I think they're too airy.
To make the trifle, I used the same cake batter and added Thin Mints to the mixture, and baked in an 8-inch cake pan. Then I crumbled the cake, mixed it with pudding and frosting and topped with mint chocolate chips. Really trifles are amazing because you can do whatever you want with them.
Girl Scout cookies are great, but sometimes mixing them up is just a little more fun.
