Okay, I get it.  I do.  Not everyone is a fan.  Some people wrinkle their nose when they see it, and others politely slowly walk past it without a single scoop onto their plate.  For me?  I'll take a pile high onto my plate, thank you!

There's something so comforting about it, like the smell, the texture, the crunchy topping that gets perfectly golden in the oven.  It's nostalgia baked into a casserole dish.

You can keep your sweet potatoes, fancy Jell-o, and homemade whatever for yourself because while you're busy chowing down on those, I'll be crunching away at Illinois' least favorite Thanksgiving side dish.

I don't know why people hate on it so much!  I guess I grew up eating it and love it, so I don't see a problem with it.

It's simple.

It's mushy.

Easy to make.

It's just one of those dishes that tastes exactly like your childhood every time you eat it, just like... deviled eggs (which is like my #1 favorite side dish, ever.).

Maybe it's the crispy onion bits on top.  Maybe the creamy goodness underneath?  Or maybe it's that one person in your family who insists on never letting it die at Thanksgiving (yes, hi, it's me).  Thanksgiving isn't complete without Green Bean Casserole.  It's so underappreciated.

So, while mashed potatoes and stuffed get all the attention (which I do love, too), I'll be over in my corner with the entire dish of green bean casserole eating away.  Alone.  Sharing?  Not allowed in my book.
