We've been waiting what seems like forever for Rockford's Disco Chicken's restaurant to open and when it did this weekend, there was one 'light' surprise.

I get very excited when new businesses open in downtown Rockford. Whether they're book stores, boutiques, salons, bars or restaurants, I'm always so happy to see the doors open and watch Rockfordians enjoy the new spot.

It's especially wonderful when the new business fills the space of an old business that we all loved. Disco Chicken is absolutely doing that.

Taco Betty's was a big deal in Rockford and grabbing a drink (and maybe some taquitos) on the roof was a major part of downtown Rockford summers. When they flipped to 212 Grindhouse and eventually shut the doors, Rockford was sad.

I was always excited for Disco Chicken to take over the building. I expected a fun look, lots of bring yellow and a lot of fried chicken, which was the only small flaw for me. Listen, I don't know what it is, but fried chicken doesn't make me feel so great. It could be peanut oil? I'm self-diagnosed with an intolerance... or maybe it's something else, but whatever it is, I was sad when I realized the Disco Chicken menu would likely be a list of chicken sandwiches and tots.

But then. I went to Disco Chicken and there is ONE item that I hadn't seen on the food truck menu before. Ladies and gentlemen, there's a salad. A salad you can get with grilled chicken! It's like I heard angels singing when I saw 'The Lightish Side.'

Because I didn't know about the salad, I already ate dinner before I got to Disco Chicken, but you know I made room for dessert.
