Once upon a time, ramen was something you bought because you were in college and poor, now it's super trendy and taking over the Stateline.

My first experience with ramen was actually in elementary school. I had a friend who called it ramen soup and I was confused because I always drained it and called it ramen noodles.

The older I get, the more I think she might've been right on that... but I digress. This story is not about me. It's about Mario's Taco Express.

A taco truck I never heard of until I was scrolling through the Rockford N Stateline Foodie Facebook group.

Sure the tacos look great, but what caught my eye was the noodle bowl, which I found out is called, BirriaRamen.

According to 'I Am a Food Blog,' BirriaRamen is:

Birria ramen is a mash up of birria and ramen. Birria is a savory, slightly spicy, sweet, sour, and super savory Mexican (traditionally lamb) beef stew. Chunks of beef are marinated in dried chiles, chipotles in adobo, vinegar, herbs, and spices and slow cooked into a tender, fall apart, juicy beef stew. Ramen is a Japanese noodle soup with a rich, deep flavorful broth full of umami, chewy noodles, and toppings.

I'm a little bit of a spice wuss, but I'll try it, it looks so good!
