Apparently Sweet Potato Toast is a Thing; Mandy James Tries It
I love sweet potatoes; I also happen to love toast, but unfortunately I don't eat a lot of toast these days because there's just too many dang carbs. Then, while searching for new and exciting ways to make chicken, I saw this headline: "So Sweet Potato Toast is a Thing Now" and I thought, huh? Sweet potato toast? Naah, no way this could be good; I'd much rather have my sweet potatoes baked or fried, but I did some further digging and people are loving this sweet potato toast.

When I got home from the gym I immediately had to try it. I didn't have the best luck with my toaster (it's old and cheap) but I had some success with making the toast in the oven; check it out.
Intrigued? Try it for yourself. It really is delicious.
1. Cut your sweet potato into thin pieces; about 1/4 of an inch.
You can see where I took a bite out of the one I tried in the toaster. Ha.
2. Place them in a covered baking pan and spray with oil and salt.
3. Bake at 400 degrees for 30 minutes; flip the potatoes after 20.
4. Add your favorite topping.
Now that you've got your sweet potato toast, it's time to wash it down with the Pink Drink from Starbucks.
