Remember that phase where we replaced everything we ate with cauliflower? From pizza to pasta, cauliflower ruled our dinner tables. And for a lot of people it's still a healthy alternative.

I heard a while ago Chipotle MIGHT be testing cauliflower rice, and it turns out the rumors are true. They're only testing in certain "test states" but lucky for us, one of those states is Wisconsin!

So what's it's made of and what does it taste like? Today details -

The new cauliflower rice base starts with grilled cauliflower that's seasoned with freshly chopped cilantro, lime juice and salt. It's 100% grain free and contains 4 grams of carbs per serving, making it a good option for those following low-carb diets, like South Beach or the ketogenic diet. The riced cauliflower is also 100% vegan.

Chipotle had some fun teasing the new menu item on Twitter -

They don't have an official date for the national launch of their new cauliflower rice, but like I said, we don't have to go far to try it. Because according to Today -

For now, those living in Denver and Wisconsin will be able to try the new cilantro-lime cauliflower rice for an additional $2 starting this week.
