Five Insanely Delicious Veggie-Packed Dishes in Rockford
Rockford is home to loads of delicious food and some incredible veggie only dishes.
Monday, June 17 is 'National Eat Your Vegetables Day,' and so we're giving you plenty of time to pick out which of these veggie based Rockford dishes you want to try.
Maybe all of them?
First up? The' Wood Roasted Vegetable Fondue' from Woodfire in downtown Rockford.
The menu lists the dish as: variety of cauliflower, peppers, cremini mushrooms, zucchini,garlic & onion, charred in our brick oven, served with a white wine fondue sauce.'
I call it insanely delicious and was so pumped last time I went to Woodfire and tried this.
Next, the 'Vegetable Stir-Fry' from Johnny Pamcakes.
I know you're like... Michelle we order pancakes there... but you should absolutely try this next time you're looking for a veggie packed lunch or dinner! It's described as: An assortment of sauteed vegetables,tossed in a stir-fry glaze, served over rice.
My buddy Rachel Rockford Cravings captured this veggie packed beauty from Prairie Street.
The Poke bowl is packed with 'nori rubbed & house-cured salmon, edamame, avocado, house-fermented thai sriracha aioli, sesame seeds, crispy shallot, mixed radish, pickled carrot, and sushi rice.'
Speaking of salmon, there's a very veggie packed salmon dish over at Thunder Bay Grille.
The Salmon Fresca is, 'Atlantic salmon, roasted vegetables, asparagus, balsamic vinaigrette, feta cheese, citrus butter,' and it's OMG good.
Last but certainly not least, the spring roll in a bowl at Pho Square.

Which is really called a 'Vermicelli Bowl.' It's packed with angel-hair noodle salad served with shredded lettuce, fresh herbs, bean sprouts, cucumber, pickle daikon & carrot, crushed roasted peanuts, served with a classic Vietnamese vinaigrette.'
