Food Trucks That Would Go Crazy In Rockford

Maybe it's just me, but Rockford really feels like the Food Truck Capital of Illinois these days.

Between city events, festivals, brewery night, and random weekends around town, it seems like there's always a food truck parked somewhere serving up something delicious. In fact, I honestly think I visit food trucks more often than sit-down restaurants! There's just something fun about grabbing food from a truck. The menus are pretty unique and somehow everything tastes better when you're eating outside.

That got me wondering: what food trucks is Rockford missing?

I would lose my mind over a baked potato food truck. I know, it sounds simple, but have you seen the loaded baked potatoes all over TikTok? These things are massive, steamy, piled high with toppings, and we do love potatoes in all forms around here. I really think a baked potato food truck would be an instant hit.

I also asked on Facebook what food trucks they'd love to see roll through here, and the responses were pretty good!

Pizza by the slice (you'd think we'd have that already!)
Pierogi & breakfast food trucks
Cannabis-infused foods
Thai street food

I did see a lot of people say we have enough taco trucks. I do agree, we have a lot, but the options are endless so I can't complain one bit! What food trucks would you love to see come to Rockford and be here to stay?
